Raising Abalone

Aloha!  Today was a pretty amazing day!  I visited one of our local seafood suppliers, “Big Island Abalone Company,” located on the Kona Coast here on the Big Island of Hawaii, and met with the CEO Hiroshi Arai.  He showed me the expansion of their facilities, which is important for the diverse sizes in abalone. Then he updated me on our local abalone program, a program designed to help raise abalone.  It turns out we have increased the Ezo Abalone from just 1 million to over 4 million!  I couldn’t believe it!

The “Ezo” Abalone is native to Northern Japan and is highly prized by professional chefs in 5 star restaurants.  Ezo Abalone are sweet, delicate, and simple to prepare.  Their diet consists of algae and seaweed.  Tasty is an understatement.

Right now Whole Foods Market offers the live abalone (can be shucked for no additional charge) as well as a gift box with “Shucked abalone.”  And soon, we hope to have whole frozen shelled abalone so stay tuned!  Until then, if you have never tried abalone, I highly recommend it!  Aloha.
