Serves 4 as a stew - twice as many over polenta or other choice
approx. 3 lbs...
1/2 cup agave nectar (or to taste)
3 cups water
zest of 2 limes
1 cup lime juice, freshly squeezed
In a medium saucepan, bring 1 cup of water and agave nectar to a boil over medium heat. Stir until sugar is dissolved, then remove from heat. Add lime zest. Let steep at least 10 minutes. Strain mixture (can refrigerate and save this simple syrup mixture separately to add to teas, mixed drinks, etc). Add remaining water and lime juice. Serve chilled, over ice.
Try steeping the simple syrup with mint or basil, or add fresh sprigs to finished drink. Substitute 3/4 cup sugar or honey for the agave.
